Description

Daniel-Etienne Defaix Chablis 1er Cru 'Cote de Lechet' 2013Defaixs Cte de Lechet is a master class in mineral precision. This remarkably steep site (a 45% gradient) with very poor soil produces a wine that Danny describes as embodying the real, true mineral expression of Chablis. Freshly blasted chalk dominates the nose, with notes of lemon, honey, and fresh herbs lurking underneath; still, this is a wine of minerality first and foremost. The family owns a 3. 5 hectare parcel of 45 year old vines in this

Comprising 60% Sangiovese

which is no longer in production beginning with the 2020 vintage

With fruit notably more luscious and supple than its white-Xarel·lo counterparts

“Aloers” is pressed whole-cluster and very slowly and gently

The youngest vines of all the Chardonnay sites Ken and Erica work with go into this

this Fleurie undergoes a cuvaison between 10 and 15 days

Philippe prefers a small dosage to none

“Les Georges” is classic Chinon in its marriage of vibrant fruit

evocative of Rolle’s thick skins

with all elements hanging together in delicate harmony
