The agaves are crushed using a roller mill and then fermented in stainless steel tanks. Another option is to ferment the agaves naturally in open air wooden tanks using ambient yeast after crushing them with a tahona. The end result is a refreshing blend of fresh nopal, peppercorn, orange zest, saffron, peach fuzz, candied plum, brown butter .
